Chicken and Rice with Broccoli Skillet

Don’t be fooled by the name. This dish is very different from the Chicken and Rice dish I posted a few weeks back.

Ingredients:

4 small boneless skinless chicken breast halves

1 can of condensed cream of chicken soup

1/4 tsp. paprika

1/4 tsp. pepper

2 cups of fresh or frozen broccoli florets (I prefer fresh)

2 cups of Minute White Rice, uncooked

1-1/2 cups of water

First: heat 1 tbsp. of oil in a large skillet on medium-high heat. Add chicken; cover. Cook 4 minutes on each side or until cooked through. Remove chicken form skillet; cover to keep warm.

Second: add soup, 1-1/2 cups of water, paprika and pepper to skillet; stir. Bring to a boil.

Third: add broccoli and rice; stir gently. Top with chicken. Sprinkle chicken with additional paprika and pepper; cover. Reduce heat to low; cook 5 minutes.

Makes 4 servings
