Million-Dollar Recipe
I wrote down this recipe for baked chicken with spinach stuffing when I was watching Oprah. Apparently the woman who concocted this recipe was awarded $1 million in prize money at a cooking competition. I’ve made it before, and althought I would necessarily say it’s worth a million bucks, it’s still good and it’s fun to say you’ve made the million-dollar recipe.
Baked Chicken with Spinach Stuffing
Ingredients:
- 4 large chicken breasts, thawed
- 1 small package frozen spinach, thawed or 1 can spinach, drained
- 1 package frozen waffles
- 1 onion, chopped
- 5 Tbsp. maple syrup
- 4 Tbsp. peach preserves
- 1 Tbsp. worchestershire sauce
- salt and pepper
- 1 tsp. butter
- 1 tsp. sage
- 1 tsp. poultry seasoning
- 1 tsp. egg white
- 1/4 cups chicken broth
Directions:
Combine syrup, peach preserves, and worchestershire sauce in a small bowl. Stir until smooth. Place chicken in baking pan and smother with mixture. Bake at 350 degrees for 45 minutes. While the chicken is in the oven, prepare the stuffing. (Try to do this in 20 minutes as the stuffing needs 25 minutes to bake, and you can put it with the chicken.) Toast 4 waffles and cut them into 1-2″ cubes. Set aside. Melt the butter in the skillet and sautee the onions until they are slightly browned. Add the waffle pieces, chicken broth, sage, and poultry seasoning. Take off heat. Stir in spinach and wait about 5 minutes for the pan to cool. (you need to add the egg white, but you don’t want it to scramble. I usually put the pan in the freezer for a few minutes to ensure that this doesn’t happen!) Add the egg white and stir. Put in an 8×8 baking pan with deep sides and bake with the chicken for 25 minutes. It’s done!
