Sizzling Fajitas…in the microwave!
These are so good, you’ll never believe they came from a microwave! For all those people stuck in dorms with no stoves.
Ingredients:
- 1 1/2 pounds flank steak, cut into small strips
- 3/4 cup medium salsa verde
- 2/3 cup green onion, diced
- pinch of red pepper flakes
- 3/4 cup medium tomato, diced
- 3 burrito-sized flour tortillas
- 1/3 cup sour cream
Directions:
Microwave flank steak strips, covered, in a small casserole dish on high power for 4-5 minutes until meat is rare, but not raw. Add salsa verde, diced onion, pepper flakes, and diced tomato to the steak, combining well. Recover casserole and cook on high for 2 1/2 to 3 1/2 minutes. Test mixture for doneness and let rest, covered, for 3-5 minutes. Serve with tortillas and a dollop of sour cream.
